In 1878 a young boy named Henry McCarty washed dishes in the kitchen at the Hotel de Luna on the edge of the Camp Grant military reservation near present day Bonita, Arizona. He also did some cooking and stealing horses before he changed his name
to William Bonney and became known in legend as Billy the Kid. He’s probably the most famous dish washer in history.
