Why do Westerns show mainly
male horses?

I assume by male horses, you mean geldings. Stallions are full of testosterone, while geldings are more mild-mannered. I worked trail rides for years, and geldings never caused the problems that mares did. Movie wranglers likely preferred geldings over stallions and mares.
